WLP095 Burlington Ale yeast
WLP095 This yeast is great in NEIPA styles because it throws a little personality and body into your beer. Esters are higher than WLP001 and this strain has been known to result in more diacetyl increasing the temperature at the end of fermentation is suggested.
You'll find this gem of a yeast produces that unique stone fruit peachy note so sought after for NEIPA's, particularly as it gets a few generations older.
Pitch at 20, raise to 22 at 36-48 hrs, finish at 23 Deg C and hold for 3 days as a diacetyl rest. Dry Hop during this period. This will max out the peachy esters sought after for NEIPA's and clean up diacetyl.
